Chocolate Thumbprint Cookie

Ingredients

1 1/2 cup all purpose or GF 1:1 flour

1/2 cup cocoa powder

3/4 tsp baking soda

1/2 tsp salt

10 tbsp butter

1/2 cup coconut sugar (or brown sugar)

1 tsp vanilla

1 flax egg, or 1 regular egg

1/4 cup maple syrup

Extra coconut sugar for coating
Steps:

In a large mixing bowl, cream together butter, sugar and vanilla, until light and fluffy.

Beat in egg and maple syrup until fully incorporated.

In another mixing bowl, sift together flour, cacao powder, baking soda, and salt.

Slowly mix dry ingredients into wet ingredients, until just combined.

Cover and let chill in fridge for 1+ hours.

To bake cookies, preheat oven to 350 F. Line baking sheet with parchment paper.

Roll dough into ~ golf ball sized / 2 tbsp size balls.

Toss dough balls in coconut sugar, place on baking sheet.

Unwrap your chocolate minis and gently press one mini into the center of each cookie, flattening it down until the cookie is ~ 1/2 inch thick.

Bake cookies for 10 minutes, rotate pan, and bake for another ~5 minutes, until cookies are set to the touch.
